Sorry, but I don't like it. It's too disruptive and jarring to have to have this attention demanding full screen menu pop up and block everything just to do some little thing.
____I have full sympathy with your well expressed objection. It is my nature to react against change. But I suprised myself by having a positive first impression. As someone with BOOKS in his home, I like the 'retro' aspect: it is set up like a table of contents w/o busy stuff like the TV and puzzle.
____ Most importantly, what we have on this site are coders that listen to feedback and try to make things 'user friendly'. They are already taking some kinks out...
I miss the top bar. It was nice having everything within reach of a single mouse stroke and click. Yes, the site looks cleaner now, but it's less convenient in my opinion.
There's no doubt the friendly lichess coders have good intentions and want to make things user friendly for us. It's just that different people might have different definitions of what user friendly is. I liked being able to look at sub menus as some little extra on the side while still feeling connected with the main screen. Sometimes I just clicked them out of boredom while waiting for a game. Now, it's like "DON'T YOU DARE TO NAVIGATE THE SUBMENUS UNLESS YOU ARE REALLY SURE BECAUSE WE WILL OBLITERATE YOUR SCREEN!!!!!!!!!"

It sucks! Because previously I could switch between TV-Tournament-Play with one click, now I have click ten times.

Reading that gave me a smile- how different people's takes on something can be. The reaction I had was "oh god, this three line menu thing. I don't know where this fad came from (facebook? smartphones?- I don't use either) but it seems to be taking over everything these days" And in your eyes it has some kind of retro feel of old books. Go figure :P
Please, bring back the header menu instead of hamburger menu. It multiplies clicks that I have to make to reach stuff.

When my game is finished I could just press "Play" and I was brought back to the main screen. Now I have to click that menu, then drag my mouse to "Play". Waste of energy.

The previous menu was so simple, don't ruin lichess.
Click the website title "lichess.org" to get back to the main screen. It's bigger and easier than the former "Play" link.

Note that you can bring the new menu up by pressing the <space> key.

I always expect emotional negative responses when I change something. Some people just hate change.
But worry not, I don't take it seriously, and your old habits will be fixed within a few days.
Previously, after finishing a game, there was a "Play Again" button, which directly created a new game. Then that was taken away, and I had to click on the Menu to create a new game, and now I have to click and move around even more.

This is not a very nice change.
